We offer recipes made from ingredients chosen for their quality and production methods, respecting the seasonality of our raw materials.
Alongside the timeless classics — Monferrato-style anchovies, old-fashioned vitello tonnato, panna cotta — we add variations on the theme: dishes that, like young branches, play with new interpretations.


Wine & spirits list
We focus on seeking out special labels: heroic wines, made from grapes grown in rugged places, and wines that «were no longer there».
Grapes rediscovered in recent decades, survivors of phylloxera and of mass production — a heritage returning to the glass.
The building · 1573
Goustò is housed in the historic palazzo of the former Mauriziano hospital, built in 1573 in the Santa Croce block.
In the 18th century the Palazzo dei Cavalieri was redesigned by the architect Filippo Juvarra; at the end of the 19th century it became a shopping arcade named after King Umberto I. Inside, the fine glass-and-metal roof and the lunettes painted by Mauro Chessa.
